If you're trying to fill your freezer with high quality, grass finished beef, our quarter and half shares offer the most efficient method.
Our grass finished steers are raised and finished completely on pasture. They are kept in a herd environment and allowed to graze freely, without routine antibiodics or artificial growth hormones.
Customers have a choice of two butcher shops, either Lepe's in Santa Rosa or Browns Valley Market in Napa. The butcher shop of choice will age, cut and wrap the beef and customers pick it up at the butcher shop upon completion.
Choose Share Size
All of our beef shares are sold in halves or quarters, which are intended to give customers a freezer-filling assortment of cuts.
Quarter Share
Quarter shares weigh about 200 lbs at harvest and yield about 100lbs of beef, which includes a standard mix of cuts, including roasts, steaks and about 50 lbs of ground beef.
Half Share
A half share weighs about 400lbs and yields about 200lbs of beef. Customers who order a half share work directly with the butcher to have the beef cut and packaged to their preference. You can choose steak thickness, amount of ground beef, roast sizes, the options are yours!
Aging, Cutting, Wrapping and Pick Up
All of our beef is harvested at a local USDA facility and delivered to the butcher shop where it is weighed and then stored for aging. The beef is dry aged for a minimum of 14 days and then cut and wrapped. Customers pick up their beef at the butcher shop of their choice about three weeks after harvest.
Pricing
Grass finished beef is $8.65/lb, hanging weight. This price includes all processing fees including butcher fees, transport to the butcher shop, aging, cutting and wrapping.
Hanging weight is the weight of the carcass when delivered to the butcher shop. A quarter share will be about 200lbs, hanging weight. During the aging, cutting and wrapping process, there is a nearly 50% loss, so you will have about 100lbs of beef to take home.
Typical cuts in a quarter share include:
50 lbs ground beef
30 lbs roasts, briskets, stew meat, prime rib
20 lbs steaks, filet mignon
5) Reserve Your Share
Deposits are required to reserve your share, the balance is due after harvest, prior to customers picking up the packaged beef at the market.
